Lazy Berry Cobbler

It really isn’t fair that Oregon strawberry season comes and goes so quickly, and during one of the busiest times of the year! Luckily for us, we got the family out to our favorite strawberry picking farm, South Barlow Berry farm, just in time for the end of strawberry season!
Word to the wise- strawberry picking sounds like a fun activity to do with at toddler, but note that most of that time is spent bending over to reach the strawberries at ground level, while simultaneously keeping track of your kid… who might be wandering off to go check out the horses or into traffic. This is a juggling act that is best remedied by bringing lots and lots of bonus mom’s – AKA grandma, great-grandma, and a slew of aunties!
We picked so many berries, which is perfect because we have so many favorite uses for this beloved Pacific Northwest fruit- We made strawberry jam, strawberry shortcake, and with the leftovers, we made this fabulous berry cobbler!
Why is it lazy? Because it takes so little effort to make! Melt some butter in a pan, dump in the cobbler batter, and top with berries. Pop that baby in the oven, and 40 minutes later, you have a delicious cobbler waiting for your gobbler! We love to serve this with freshly-whipped cream, but it’s also great with ice cream, or just on its own. We hope you enjoy!

Lazy Berry Cobbler
Ingredients
- 1 stick of butter
- 1 cup flour
- 1 cup sugar
- 2 t baking powder
- 1/2 t salt
- 1/2 cup milk
- 3 cups berries bakers choice! We made ours with blackberries, raspberries, and strawberries
Instructions
- Preheat oven to 375f. Melt the butter in a glass pan in the oven so that it coats the bottom of the pan.
- In a separate bowl, mix together flour, sugar, baking powder, and salt. Then, add in the milk slowly, mixing until it creates a thick batter.
- Pour mixture into the pan, so that it covers the melted butter, and top with 3 cups of berries.
- Bake for 40 minutes, and serve with ice cream, whipped cream, or just spoon directly into your mouth
